We Greeks like good food so i will start from the meat. So lets move around Athens and check the best ones. One of the best barbecue tavern in Athens area is Telis in Evripidou Str.
Telis is the master of pork chops. This is his specialty. If you order for a plate you will notice about four to five pieces above fried potatoes. He is all day open and very economical also. Its a kind of fast pork steak food. It is a must taste since you visit Athens. Another must taste is Thanasis kebab souvlaki in Thision. It is mixed lamp and veal chopped meat over charcoals. Cooking on the grill is a great way to keep the heat of cooking outside your home as well as to bring the family together for the entire cooking process. Moms read: this is a great way to get dad to help out with meal preparation. While this is said somewhat in jest, there is some truth to the fact that men are much more inclined to slave away over a hot grill than a hot stove. More importantly, most of the mess of cooking on the grill remains outside your kitchen. I don't know about you, but that is a huge bonus for me, when it comes to cooking.

Cooking on the grill is also a great way to get the kids involved in the meal preparation and clean up process. We like to use disposable plates when grill cooking and keep the dining al fresco. If you are hoping for instant family unity over the picnic table you might want to think again but there isn't anything quite like it when it comes to not worrying about spills or dropped food as you can rest fairly certain that the animals will take care of anything that gets left behind.

Even small children can help when cooking on the grill by bringing utensils to the grill, holding plates, and 'setting' the picnic table for your dining experience. If you intend to do a good deal of cooking on the grill you may want to invest in some portable and 'kid friendly' containers for things such as condiments, napkins, plastic ware, and tablecloth holders. Be sure to find containers that can handle a decent gust of wind without flying off too. These may be a little heavier for your little ones to hold but they won't be nearly as difficult to chase when blowing across the lawn.

Cooking on the grill is a great way to enjoy nature after a long day of work. Be careful that you do not reserve this as a weekend event as you will find you miss out on some of the relaxing qualities it can bring to your midweek slump. One thing that can definitely be said about grill cooking is that the selections are almost as limitless as they are when cooking on the stove. You must use your imagination for maximum effect though very few meats and vegetables are truly off limits when it comes to cooking on the grill.

Recipes With Marsh Samphire

tuna steaks recipe Steaks and Grill GuideMarsh samphire (Salicornia spp), also known as glasswort and Sea Asparagus is a succulent salt-tolerant herbaceous plant that grows in salt marshes and on beaches. It is in season between June and August, but is best early in the season, before it flowers. he plant is famous in Norfolk, where pickled samphire has been served as a bar-top nibble for many years. Recently samphire has begun to appear on the menus of trendy restaurants. Mainly as a garnish though increasingly as an integral part of fish and seafood dishes.


This use of marsh samphire in trendy restaurants has made this a prince amongst wild foods and has introduced many people to the delights of foraging. Yet few people know how to make the best of marsh samphire itself.

The first essential is to pickle the plant, to make the most of it's short season:

Pickled Marsh Samphire

Ingredients:
1.4kg marsh samphire shoots
300g salt
800ml white pickling vinegar

Method:
This is best made with young marsh samphire, gathered in July (before the plant flowers). Trim the samphite, remove any woody stems then break into 5cm length pieces. Lay in the base of a dish and sprinkle with salt. Allow to marinate for 24 hours then wash the salt off.

Dry the samphire then place in a pan with just enough vinegar to flavour. Bring to a boil, reduce to a simmer and cook for 2 minutes. Pour into cleaned and sterilized jars that have been warmed in an oven set to 80°C. Seal and store until needed.

But it is as a fresh vegetable that marsh samphire is at is best (and it is for this reason that it's called 'Sea Asparagus' and the following recipe makes a wonderful accompaniment for steak or tuna:

Samphire with Girolles

Ingredients:
200g girolle/chanterelle mushrooms
250g marsh samphire
Sea-salt and freshly ground black pepper to taste
30ml extra-virgin olive oil
The juice of one lemon
1 clove of garlic, peeled and chopped
A small pinch of flat-leaf parsley, chopped

Method:
Wipe the mushrooms with a dry cloth (do not wash as the water will ruin them). Trim the samphite, remove any woody stems and wash thoroughly. Place the samphire in a pan of boiling water and blanch for 1 minute. Drain and set aside.

Add the oil to a pan and when hot add the garlic and mushrooms. Cook for 1 minute then add the lemon juice and samphire. Cook until heated through then serve topped with the parsley.

7 Essential Tools For Backyard Grilling Success

Ma always used to say that a 'workman is only as good as his tools'. To a degree she was right. If a workman (or woman) does not have the right tools for the job then the job will probably not get done properly. The same goes for grilling. So here are the seven essential tools that every backyard griller should have.

Thermometer - get yourself a reliable thermometer. This will enable you to check the internal temperature of the cooking food. This will help you to avoid overcooking and undercooking. If you buy a cheap thermometer, you could end up with one that gives the wrong reading so choose carefully and wisely.

Spatula - there are plenty of these around but as with the thermometer, it is worthwhile getting a good non-stick spatula. Make sure also that it is large enough to get under a big fillet of fish, which will avoid any disasters of the fillet falling apart as you flip it. Having one with a bent handle is also good as it makes it less awkward to use.

Wire brush - this is a case where the price doesn't really matter. The brush is just for cleaning off the grill afterwards. The important thing is that you have one as dried on foods that are re-heated again and again will impart off-flavors to anything you grill.

Brushes - You should get a couple of these at least, ordinary pastry brushes will be fine and can really save time. Keep one for oiling grilling surfaces and maybe 2 or 3 others for basting. Replace them when the flavors of the basting mixture do not wash out fully. You can use a spoon for basting but brushing gives a more even and thorough coverage.

Skewers - There are plenty of these to choose from. Skewers with handles are more convenient but whatever type you buy, get them with a flat blade design. The simple sharpened wire design are a complete pain, when you try to turn the food, this type just rotate within the food, it then needs turning individually which is time consuming.

Mitts - heatproof mitts are a real boon, you can pick up hot stuff without worry. Getting a fireproof pair is always a good idea as there is always the possibility of the mitts coming into contact with a naked flame whilst grilling.

Tongs - if you buy only one specialist grilling tool, make it a pair of tongs. Many inexperienced grillers will just use a fork. Each time you flip your meat, a fork pokes holes in it and allows the juices to flow out. This makes the meat dry and reduces its flavor. You can use a spatula but that is more awkward and makes it a tad more difficult for a visual examination of the meat when checking if it is cooked. A good quality pair of tongs are best, cheap ones will distort, making food handling more difficult.

So, get the right tools for the job and you will get better results from your backyard grill.

Again, if your barbecue grill is made of stainless steel, do not use a brush with steel bristles, but rather one made with rubber or plastic bristles instead. Even a plain damp rag or sponge will do.
