4 salmon steaks (about 1/2 lb. each)
1/4 cup lemon juice
2 Tablespoons olive oil
3 Tablespoons fresh chopped dill, or 2 teaspoons dried dill weed
1/2 teaspoon salt
1/8 teaspoon white pepper

1. Place salmon steaks in a glass baking dish, 9"X 13" in size.
2. Get the lemon juice, oil, dill, salt and pepper stir together in a small bowl.
3. Coat both sides of the salmon with the marinade that you have prepared.

Savory Beef Fajitas

Beef FajitasSizzling beef steak is layered with onions, peppers and spices and served with warm tortillas and salsa.
1/4 cup vegetable oil
1/4 cup lemon juice
3 garlic cloves, minced
1 1/2 teaspoons grated lemon peel
1/4 teaspoon chili powder


1/4 teaspoon pepper
3/4 pound beef flank steak, cut into thin strips
3 green onions, thinly sliced
4 ( 8-inch) flour tortillas
Salsa

Directions

In a bowl, combine the oil, lemon juice, garlic, lemon peel, chili powder and pepper. Place half in a resealable plastic bag. Cover and refrigerate remaining marinade. Add meat to bag. Seal and turn to coat; refrigerate meat for 4 to 8 hours.

Drain and discard marinade. In a skillet, heat reserved marinade. Add meat and green onions. Cook and stir until meat reaches desired doneness.

Using a slotted spoon, place about 1/2 cup beef mixture down the center of each tortilla. Top with salsa. Fold sides over meat mixture.

Turn left over roast beef into delicious enchiladas with chile peppers, cheese and spices.

3 pounds beef chuck roast
1/4 cup water
1 1/2 cups beef broth
3 tablespoons red wine vinegar
2 tablespoons chili powder
1 tablespoon ground cumin
1 large onion, chopped
2 ( 4 oz.) cans chopped green chile peppers
1 tablespoon all-purpose flour
2 cups sour cream
3 cups shredded Monterey Jack cheese, divided
1 cup oil for frying
20 ( 6-inch) corn tortillas

Directions

Preheat oven to 375 degrees.

Place beef chuck roast in a large saucepan that has a tight-fitting lid. Pour in water, cover, and simmer on low for 30 minutes.

Increase heat to medium high, and brown the roast on all sides. Once the water has boiled away, pour in the beef broth, vinegar, chili powder and 1 tablespoon of cumin.

Cover tightly and reduce heat to low. Simmer for 1-1/2 to 2 hours or until the beef falls apart when you try to pick it up.

Shred the beef, using 2 forks or your fingers. Place shredded beef back into the saucepan with all the juices, and let cool to room temperature.

In a large skillet, saute the onion until just soft, not browned. Mix in the flour and green chilies. Stir constantly for 2 minutes to cook the flour taste out.

Stir in sour cream and 2 cups of Monterey Jack cheese. Cook on low for 10 minutes, stirring often, until the cheese is all melted and mixed. Set aside and let cool.

In a large heavy skillet, heat the olive oil. Using tongs dip the tortillas, one at a time, into the oil for 30 seconds each side. Drain on paper towels.

Spread 4 tablespoons of sour cream mixture down the center of the tortilla. Top with about the same amount of beef. Roll up and place seam side down in a 8x11-inch baking dish (you may need two baking dishes).

Repeat for each tortilla. Continue until you are out of the filling. Sprinkle with remaining Monterey Jack cheese.

Bake for 30 minutes or until cheese is melted and bubbling.

4 pounds pork baby back ribs
Salt and pepper to taste
1 cup ketchup
1 cup barbecue sauce

4 tablespoons vinegar
2 teaspoons dried oregano
2 teaspoons Worcestershire sauce
1 dash hot sauce

Beef Fajitas

Directions

Preheat oven to 400 degrees.

Season ribs with salt and pepper. Place in a shallow baking pan. Brown in oven 15 minutes. Turn over, and brown another 15 minutes; drain fat.

In a bowl, mix together the ketchup, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce, hot sauce, and salt and pepper. Place ribs in slow cooker. Pour sauce over ribs and turn to coat.

Cover, and cook on Low Heat for 6 to 8 hours or until ribs are tender.

Learn The Difference Between Prime Rib Steak And Other Steaks

The prime rib comes from the primal rib, rather than specifically being Prime grade meat. Officially, it's called a beef rib roast, and it may also be referred to as a ribeye.
A slice of prime rib will include part of the rib bone itself and the lip or cap - fat marbled muscle.

We usually cook steak by rubbing the outside with seasonings and salt, and slow reasting it over dry heat, though smoking it for two to three hours before roasting is a popular barbecue method.

It's important not to mistake prime rib for a Prime grade steak. Generally, you can't find this grade of meat at the grocery store, though there are plenty of steak options in Choice and Select grades. Don't go for the leanest meat, however. It has less flavor, and a good prime rib will include fat marbling. This offers more flavor, as does the bone included in the steak. Look for bright red steak with thin white marbling, not dark red or gray meat. Fat should never be yellow or dingy looking.

For the best meat, try dry aging. This is a little harder to find, and is more likely to be available at a butcher shop than at a supermarket. Dry aged meat has a lot of shrinkage, and will be more expensive. However, the taste is worth it, since the aging process produces more tender, flavorful meat. Most meat is wet aged, which offers greater volume (less moisture escapes) but less good flavor and less tender meat. Never buy meat that has not been aged unless you plan to do this process yourself.

A good steak should be chosen carefully, and of the highest quality you can afford. A lower grade of meat can't be improved by good cooking techniques, no matter how hard you try. It's simply not possible. This means that you should take the time to get the best steak you can. If one isn't available in your area, consider ordering one for a special occasion. But how do you tell great premium steaks from chuck? After all, there are plenty of different cuts of meat that can be referred to as steak, and they're not all created equal. Here's a look at some of the most popular premium steaks and the best ways to choose and cook them.



Ribeye is one of the most popular premium steaks on the market because of its natural tenderness and marbling. When you cook this steak, the marbled fat contributes a rich flavor to the beef. Look for boneless ribeyes at about ten ounces, or bone-in ribeye, called cowboy rib, at about twenty-three ounces. The bone can keep the steak from drying out, but may also make cooking more complex. This might also be called prime rib, scotch filet and delmonico steak, but it's all the same tender meat.

Filet is considered the best from a chef's perspective for its tenderness, but it's also one of the most expensive cuts. It's low fat when trimmed correctly, and is best suited to hot pan cooking. Look for filets that are six to eight ounces. They might also be labeled beef medallions, tenderloin, chateaubriand, filet mignon and tournedos.

Sirloin is one of the cheapest premium steaks, and is long and thin, with fat across the top in a strip. It's full flavor makes it very popular, but the meat may be tough. This means tenderizing and marinating before cooking are good choices. The better the aging and the slower the cooking, the less tough the sirloin will be. Top sirloin is generally more tender than the larger bottom sirloin, as well.

T-Bone steaks, also called club steaks, short loin or porterhouse (when larger and thicker) are steaks that include a T shaped bone with meat on either side. The larger side is quite tender, and is made of meat from the striploin, but the smaller side is tenderloin, and is even more tender. Because of the heat conduction from the bone, you'll find that small T-bones cook faster than boneless steaks. The flavor is rich, and the steak rather expensive, but this premium steak is a popular choice on the barbecue.

Rump steaks are the cheapest out of all the different premium steaks, and are also referred to as round steaks. This lean cut requires tenderizing or marinating to reduce its toughness, but it's excellent as a budget choice for those who still want premium steak. Try one, but cook it carefully to get the fullest flavor without toughness.
